Matar Paneer Ki Sabji: Ek Swadisht Bharatiya Dish

Matar Paneer Ki Sabji ek prasiddh North Indian dish hai jo hare matar aur naram paneer ko ek gajarwala aur sugandhit tamatar wale gravy mein milata hai. Yeh khushboo se bharpoor dish vegetarians ke beech mein ek pasandida hai aur aksar roti, naan ya chawal ke saath serv ki jati hai.

Matar Paneer Ki Sabji Kaise Banate Hain?

Samagri:

  • 1 cup paneer, kata hua
  • 1 cup hare matar, taza ya frozen
  • 2 bade tamatar, barik kata hua
  • 1 bada pyaaz, barik kata hua
  • 2-3 lahsun ki kaliya, bareek kata hua
  • 1-inch ka tukda adrak, kata hua
  • 2-3 hari mirch, barik kata hua
  • 1 chammach jeera
  • 1/2 chammach haldi powder
  • 1 chammach lal mirch powder
  • 1 chammach garam masala
  • 1 chammach dhania powder
  • 1/2 cup taza malai
  • 1/4 cup kata hua dhaniya patta
  • Namak swad anusar
  • Tel ya ghee pakane ke liye

Vidhi:

Gravy Tayyar Karna:

  1. Tel ya ghee ko medium aanch par garam karein.
  2. Jeera daalein aur unhe tadka hone de.
  3. Barik kata hua pyaaz ko daal kar sunehra hone tak bhunein.
  4. Kata hua lahsun, kata hua adrak aur barik kata hui hari mirch daalein. Aur kuch minute tak bhunein.
  5. Barik kata hua tamatar daalein aur tab tak pakayein jab tak woh naram na ho jaye aur tel alag hone lage.
  6. Ab haldi powder, lal mirch powder, dhania powder aur namak daal kar milayein. Acchi tarah mix karein aur kuch minute tak pakayein.
  7. Aag band karein aur mixture ko thanda hone de.
  8. Thanda hone wala mixture blender mein daalein aur smooth paste bana lein. Zarurat padne par thoda paani bhi daal sakte hain.

Dish Pakana:

  1. Aur thoda sa tel ya ghee medium aanch par garam karein.
  2. Tomato-pyaaz paste daal kar kuch minute tak bhunein.
  3. Garam masala daalein aur acchi tarah milayein.
  4. Kata hua paneer aur hare matar daalein. Dhyan se gravy se coat karein.
  5. Aanch ko dhire dhire kam kar dein, bartan ko dhak kar dish ko 8-10 minute tak pakne dein.
  6. Taza malai daal kar dhyan se milayein. Gravy ki consistency ko paani daal kar adjust kar sakte hain.
  7. Dish ko aur 2-3 minute tak pakne dein, jisse flavors mix ho sakein.
  8. Kata hua dhaniya patta se sajayein.
  9. Aapki lazeez Matar Paneer Ki Sabji tayyar hai serv karne ke liye!

Samriddhi:

Matar Paneer Ki Sabji ko garam garam roti, naan ya chawal ke saath serv karein. Isko aap dahi ya achar ke saath bhi nosh kar sakte hain. Is classic Bharatiya dish mein masalon aur textures ka adbhut mel aanandit karein!

Tips:

  • Agr bhare huye paneer chhote chhote tukdon mein kata hua hai toh unhe gravy mein daalne se pehle 15 minute tak gungune paani mein bhigokar rakh dein, jisse woh gravy mein jyada malai dar texture mein ho.
  • Apni pasand ke anusaar mirch ka tadka adjust karne mein mukt ho jayein.
  • Agar aap frozen matar istemal kar rahe hain, toh unhe bina blanching ke gravy mein daal sakte hain.
  • Is dish mein cashews, kishmish ya palak jaise aur bhi ingredients ko milakar alag alag variations try kar sakte hain.
