Samagri (Ingredients):

  • 2 bade size shimla mirch (hara, laal aur peela rang)
  • 250 grams paneer, chote tukde mein kaata hua
  • 2 bade pyaaz, kate hue
  • 2 bade tamatar, kate hue
  • 1 chammach adrak-lehsun ka paste
  • 1/2 chammach haldi powder
  • 1 chammach lal mirch powder
  • Namak swaad anusar
  • 1/2 chammach garam masala
  • 1/2 chammach jeera
  • 3-4 bade chammach tel
  • Kuch hari mirch, tambaku aur dhaniya patti chidkaane ke liye

Pranali (Method):

  1. Ek kadhai mein tel garam karein aur usmein jeera daalein. Jeera bhunne par adrak-lehsun ka paste daalein aur saute karein.
  2. Ab pyaaz ko golden brown hone tak bhunein.
  3. Pyaz bhunne par tamatar daal kar acchi tarah mix karein aur unhe soft hone tak pakaye.
  4. Ab haldi powder, lal mirch powder, aur namak daal kar milayein aur masale ko acchi tarah pakayein.
  5. Ismein paneer aur shimla mirch daal kar halka bhunai karein, dhyaan rahe ki paneer ko jyada hilaye nahi.
  6. Ab garam masala daal kar ache se milayein. Agar aapko zyada chatpata swad chahiye toh thoda sa amchur powder bhi daal sakte hain.
  7. Sabji ko 2-3 minute tak pakayein, dhak kar dhimi aanch par. Paneer aur shimla mirch ko overcook nahi hona chahiye.
  8. Hari mirch, tambaku aur dhaniya patti se sajayein.
