Samagri (Ingredients)

  • 1 katori besan
  • 2 katori dahi
  • 1/2 chammach haldi
  • 1 chammach lal mirch powder
  • 2-3 hari elaichi
  • 1 chammach jeera
  • 1/2 chammach ajwain
  • 2 tej patta
  • 4-5 laung
  • Namak swad anusar
  • 4-5 khatti imli
  • 2-3 hari mirch
  • 1/2 katori pyaaz, barik kata hua
  • Adrak aur lehsun ka paste
  • 2 chammach sarson ka tel
  • 1 chammach ghee
  • Hara dhaniya (garnishing ke liye)

Vidhi (Method)

Step 1: Sabse pehle ek bowl mein besan lein aur usme thoda sa paani mila kar gaadha batter banaye. Ab is batter ko 15-20 minute ke liye rakh dein.

Step 2: Dahi ko ache se phent lein aur usme haldi, lal mirch powder aur namak daal kar acche se milaye. Dhyan rahe ki dahi ko bilkul smooth consistency tak beat karna hai.

Step 3: Ek kadhai mein ghee aur sarson ka tel garam karein. Fir jeera, ajwain, elaichi, laung aur tej patta daalein. Aroma release hone tak pakaye.

Step 4: Ab isme adrak-lehsun ka paste daalein aur thoda sa bhune. Uske baad pyaaz daalkar translucent hone tak saute karein.

Step 5: Isme dahi ka mixture daalein aur dheemi aanch par pakaye. Dheere dheere ubaal aane tak mix karte rahe.

Step 6: Imli ko paani mein ghol kar is mixture mein daalein aur acche se milaye.

Step 7: Ab besan ka batter daalein aur lagatar chamcha chalate hue kadhi ko pakaye. Dhyan rahe ki kadhi lagatar chalni chahiye, taki besan gaddhe na ban jaye.

Step 8: Kadhi pakne ke baad, hari mirch aur hari dhaniya daal kar dhakkan bandh kar 10-15 minute ke liye chhod dein.

Step 9: Aapki kadhi taiyar hai! Ise chawal ya roti ke saath serve karein. Hara dhaniya se garnish karein aur garama garam swadisth kadhi ka maza lein.

Tips

  • Kadhi ko pakate waqt chamche se lagatar chalate rahe, taki besan gaddhe na ban jaaye.
  • Imli ka paani thoda sa garam pani mein ghol kar daalein, taaki woh achhe se ghul sake.
  • Agar kadhi bahut ghaani ho jaaye toh thoda sa paani mila kar patla kar sakte hain.
