Dhokla Kaise Banta Hai?

Dhokla ek lokpriya Indian snack hai jo Gujarat ke rajya se mool hai. Yeh ek mazedar aur halka fulka steamed cake hai jo bhale ka aata (besan) ka fermented batter se bana hota hai. Dhokla ko snack, appetizer, ya halka bhojan ke roop mein upyog kiya jaa sakta hai. Chaliye ghar par is khushboo se bhara dish banane ki step-by-step vidhi ke bare mein jaante hain.

Ghar Par Swadisht Dhokla Banane Ki Vidhi

Samagri:

  • 1 cup bhale ka aata (besan)
  • 1/2 cup dahi
  • 1 chammach adrak-hari mirch paste
  • 1 chammach nimbu ka ras
  • Ek chutki asafoetida (hing)
  • 1 chammach Eno fruit salt
  • Namak swaad anusar
  • 1 chammach rai
  • 1 chammach til
  • 2 chammach tel
  • Taja dhaniya patti upari sajane ke liye

Instructions:

Step 1: Batter Tayyar Karein

Ek mixing bowl mein bhale ka aata, dahi, adrak-hari mirch paste, nimbu ka ras, asafoetida aur namak ko milaye. Achi tarah milaye takki smooth batter bane. Yadi avashyak ho to thoda paani mila sakte hain sahaj consistency ke liye. Batter ko lagbhag 20-30 minutes tak ferment hone ke liye rakh dein.

Step 2: Steamer Taiyar Karein

Jab tak batter ferment ho raha hai, steamer ko tayyar karein. Ek bada bartan mein paani bharein aur usmein ek steamer rack rakhein. Bartan ko dhak kar paani ko ubaal aane tak rakh dein.

Step 3: Eno Fruit Salt Milayein

Jab batter ferment ho gaya ho, usmein Eno fruit salt milayein. Batter foamy ho jayega aur volume badh jayega. Dheere se milayein takki fruit salt batter mein mil jaye.

Step 4: Dhokla Ko Steam Karein

Ek dhokla plate ko grease karein ya fir kisi bhi flat dish ko grease karein jo aapke steamer mein fit ho. Taiyar kiya hua batter greased plate mein daalein aur use steamer mein rakhein. Dhokla ko dhimi aanch par lagbhag 15-20 minutes tak steam dein ya jab tak beech mein daali gayi toothpick saaf nikle.

Step 5: Tadka Taiyar Karein

Jab dhokla steam ho raha hai, ek chota pan mein tel garam karein. Rai daalein aur use chatakne dein. Til daalein aur use sunehra hone tak bhunein. Aag se hata dein.

Step 6: Sajayein aur Pesh Karein

Jab dhokla pak gaya ho, use steamer se nikal kar thoda thanda hone dein. Dhokla ko apne pasand ke tukdon mein kaat lein. Taiyar kiya hua tadka kaatle dhokla ke tukdon par daalein. Taja dhaniya patti se upari sajayein.

Tips:

  • Zyada chatpata swaad ke liye, nimbu ka ras thoda zyada daal sakte hain.
  • Apni mirchon ke swaad anusar adrak-hari mirch paste ki matra ko adjust karein.
  • Dhokla sticking se bachane ke liye steamer ko ache se grease karein.
  • Variation ke liye nariyal ka bhurada ya kate hue nuts ka upyog karke naye toppings try karein.
